La Casita Bakeshop~If You Bake It They Will Come

I just got home from La Casita Bakeshop’s soft opening with a box full of baked happiness. My bounty includes ham and swiss croissants, spinach-feta scones, almond croissants and, my all-time favorite, the churro cruffin. Oh. My. Goodness.

Let’s rewind a bit…I discovered La Casita Bakeshop during one of their pop-ups at Parks Coffee. The pastries were the best I’d had in the DFW area. They were unique, inventive and delicious! Then, I met Maricsa Trejo and it all made sense. What a beautiful spirit. It comes through in her baking. I have been a fan ever since.

Trejo studied Culinary Arts at El Centro College. She worked in restaurants including Small Brewpub, Oak and Texas Spice at the Omni Hotel. While working at Oak, she discovered her love (and flair) for baking with Lucia Merino. In 2017, she and business partner/boyfriend, Alex Henderson, decided to go all in and start La Casita Bakeshop.

The dynamic duo took the conservative route by starting in the wholesale arena. La Casita pastries are available in area restaurants including Tribal All Day Cafe, Peaberry Coffee and Lemma Coffee. Their business quickly expanded to pop-ups which were hugely successful. I learned to arrive early or risk going home empty handed due to a sell out.

La Casita Bakeshop proves that dreams come true. I couldn’t be happier for the little bakeshop that knew it could. The bakery’s grand opening is next Saturday, February 8 at 9 AM at 580 W. Arapaho Road in Richardson. Get there early and show them some love!
